To unlock it, beat every series on the Master Class difficulty.

Jet Vermilion
To unlock it, complete each racing series on Master difficulty with each machine. You can also unlock Vermilion by completing the championship 255 times. Or go to the Grand Prix mode and press L, R, START, R, L, SELECT. When the Password screen opens, enter this code: 2-8+08T2YQ30. .
