| One of my favourite covers is Don't Let Me Be Misunderstood by Santa Esmeralda (originally by the Animals). They just took the basic ideas of the original song and greatly expanded on it, with some awesome instrumental sections. The song is also used in Kill Bill Vol 1 and it's on the soundtrack.
That's the only one I can think of right now. I also like it when bands cover songs of the bands that inspired them during live concerts, sort of as a tribute.
