I think it's case the first time, it's more interesting. You have to identify the weak spot (not too hard, most of the time), analyze its patterns, and attack the weak point (for massive damage). Maybe you're even a bit sketchy on the controls, so you don't whip out your slingshot when she climbs on the ceiling. On further playthroughs, it's just memory work. In fact, you can abuse your knowledge of the game and use Deku sticks and jump attacks for double/quadruple damage.
The same sort of thing happens with other games, most notable in my mind
Shadow of the Colossus, mainly because it's all about the boss fights.

Yeah, that damn ice puzzle... it nearly broke me. I don't even remember how I passed that puzzle, and seriously considered I was missing something.
