A ship ramming another ship is just... stupid. It would be unecessary and potentially dangerous to the Enterprise as well. It's the same reason you don't see two battleships ramming into each other in the middle of the Pacific: they'd both suffer incredible damage and they would probably both be disabled.

I've never seen the movie, so I may be wrong as far as the circumstances, but still.
