One of my favourite themes is the full metal panic fumoffu opening.

Samurai Seven has an awesome beggining, but the end song on Samurai 7, Fuhen, sucks mainly because the singer is off key. I like the Full Metal alchemist songs Rewrite and Indelible Sin, and that catchy BoBoBo opener, Wild Challenger. I'll give a quick props to Trigun's ending song as well. Other than that, there are plenty of Anime songs I like, but those are my personal favorites.

wait, I forgot two "Cruel Angle Thesis" and "Soultaker!!!"

both are very good opening themes! I wish I had a link to an MP3 of Soultaker but I found something better, a link to the official music video for the anime (and song) Soultaker by JAM project, (the band who came up with the song) http://www.youtube.com/watch?v=MPZEXqGXf8M

"Imamade Nandomo" - The Masumi Smile/The Massmissile, 4th ending.

Gundam Wing's Rhythm Emotion.

FLCL's Advice, by The Pillows.

Bleach's first opening, Asterisk, by Orange Range.
Bleach's second or third ending, Thank You!!, by Orange Range.

There's others, I simply can't remember them as of now. I'll list them later.

FLCL, .hack//SIGN and Cowboy Bebop all have fantastic soundtracks. Outlaw Star's ending theme is pretty good, too.

The opening for Gankutsuou, 'We Were Lovers.' The opening and ending themes for Higurashi no Naku Koro ni are also quite good.

King of hearts from G Gundam.

Blues drives monster from FLCL. It's the song they play in the fight with the giant hand in the 5th episode.

The opening theme to Figure 17 comes in first for me.

Closely followed, of course, by Tank!, the Chobits theme, and the Hellsing theme (Discordant sinister jazz, anybody?)

Don't forget the Kenshin End song Janjou no Kanjou and Heart of sword. They're pretty damned good.
