The Expert Sphere Grid, I'm currently using it, and having fun with it. everybody in my party at least knows first level magics, heal, life and a bunch of other stuff.

Yeah, it got old though for me because I like diversity in my characters. It's more of a challenge too if everyone doesn't know "Life" or some powerful spell like "Demi"

I don't believe the USA release of FFX has that feature. However, you can go into other grids and learn abilities of other characters (ie. later in the game, Tidus could learn Nulblaze or Cura).

... I don't remember it asking me that at the beggining of the game. But, somehow I accidently got Kimahri with a bunch of white mage spells...

You can still set the characters off their course in the Standard Sphere Grid. It's much easier to do so on the Expert Sphere Grid, though. At least, that's as much as I know. I haven't tried using it yet.
