Metal Gear Solid rocks. I also recall enjoying the original Rayman quite a bit, too.

metal gear solid, the RE games (especially RE2!), castlevania: SOTN, lunar 1 & 2 if you can find them, FF 7-9, anthology, chronicles, origins, and tactics, Gundam: battle assault 2 (1 wasn't as good but if you want 1 then go ahead and get it) both of 'em are pretty rare though, legend of dragoon, megaman X 4-6, megaman legends (all 3 0f them), soulblade (it's the first game in the soul calliber series), hmm... what else... oh Silent Hill 1, spiderman 1&2, aaand Grandia.

Destruction Derby and Armored Core if you like destroying things.

Need for Speed 1 for racing simulation, NFS3 for wacky cop-crashing action.

Anyway, I forgot, there's also some neat Mega Man X games you can play with on the PSX.
