Actually, Birdo was originally supposed to be male, but NoA made him female. I remember very clearly that my SMB2 manual said that it was a guy who wanted to be a girl (hence the pink bow).

I just looked at Birdo's wiki page, and it said she is clearly female in Japan as she is known as Catherine. In the manual for SMB2 they did mention that Birdo is a male, who'd rather be female, though.

Yep, this is true but there are still a lot of ignorant people out there who refuse to accept it and still want to go by an old outdated NES manual.
