Well, I was replaying Super Smash Bros. Melee today, and I was looking over all the trophies. With each one of Sheik's trophies, it clearly uses the pronoun "she." So, Nintendo's official position is that Sheik is not a male, but simply a disguised form of Zelda.

Well, it depends on whether you go by real-world timeline, or Zelda timeline. In the real-world, the Master Sword first appeared in LttP. IN the Zelda timeline, the Master Sword first appeared in OoT.

Er... The trophies are done by year and are thus chronological. The trophies, after all, were meant to be a reliving of old Nintendo memories... not some dissertation on the theory of every game ever made.
