You know... mashed potato and leftover veges with a little cheese and all fried up in the morning (or next lunch) and served on toast...?

most americans don't really eat it as far as i can tell but if we did we might just call it a vegetable hash even though it's not really a hash?

The only big fried mashed potato with things that go inside of it is referred to as a knish. People put mustard in it instead of veggies. If you make them yourself it can be really good.

Sounds like a bit of an impromptu version of a hot dish my family makes----------potatoes o'brien, minced onion, cream of onion soup, cream cheese and shredded cheddar, all misched up in a casserole, then topped with corn flakes or french's onions or whatever, and finally baked. Don't know what it's called, or if it even has a proper name.

I'm not entirely sure it's really a thing. But I'd call it delicious.
Do you know how much you mean to me

It looks kinda like a veggie omelet, but with potato instead of egg.

And remember, "I'm-a Luigi, number one!"
